Favorite Quinoa Salad Recipes

This month we celebrate quinoa. Often considered a grain, quinoa is a seed. The book A Fresh Wellness Mindset celebrates more uses for quinoa in your daily food lifestyle (A Fresh Wellness Mindset, pgs 61, 108, 141. Buy the book). We love quinoa more because it is a complete protein, low on the glycemic index (supportive of stable blood sugar levels, is naturally gluten-free, rich in fiber, and a good source of minerals which are the sparks that create energy), and easily digestible for most. *Quinoa is a ‘good keeper’ -- making a little quinoa salad can carry you through many meals during the week.
Enjoy this Favorite Quinoa Salad recipe variations including Tex-Mex, Mediterranean, and Indian. The base recipe with just the broth and seed will get you started and by itself can be used instead of rice for variety of taste, texture and nutrition.
The base Favorite Quinoa Salad recipe:
Ingredients: – certified Organic is always best
½ cup quinoa (any variety)
1 cup broth (grass fed bone broth, chicken, turkey, veggie – look for sugar and unnecessary ingredients on purchased broth)
¾ cup chopped bitesize veggies
½ cup cooked beans
Dried or fresh herbs
Directions:
Rinse quinoa. Bring broth to boil with quinoa. Turn down to simmer.
Add 1 tsp spice. (See variations)
Cover with a loose fitting lid so you can keep an eye on it to prevent it from cooking over. It will take about 15 minutes for all liquid to be absorbed. Keep the lid on and turn heat off once liquid is absorbed to keep the quinoa fluffy.
Prepare veggies while quinoa is cooking.
Chop herbs if using fresh
Drain and rinse cooked beans. These can be added to the end of quinoa cooking time if you like.
Add veggies and herbs to quinoa while still warm.
Fluff with a fork.
Enjoy!
VARIATIONS:
Tex-Mex
Spice: Taco seasoning
Herb: Cilantro
Veggies: Pepper of all colors, spicy or mild – your preference, tomatoes, carrots
Beans: Black
Top with diced avocado and salsa.
Mediterranean
Spice: Oregano
Herb: Mint, basil
Veggies: Tomatoes, cucumber (peeled and seeded), Olives, roasted red pepper
Herbed goat cheese or sheep feta cheese
Top with a drizzle of olive oil and lemon juice or red wine vinegar
Beans: Fava
Chickpeas instead of beans.
Indian
Spice: Curry
Herb: Turmeric, ginger, cumin, coriander, or fenugreek
Veggies: Cauliflower, tomatoes, peas, onions, eggplant
Bean: Split pea or lentils
Dressing: Tahini with lemon slurry in olive oil
Dressing suggestions: Top with a drizzle of olive oil and lemon juice or red wine vinegar. Add a small handful of microgreens to each serving for extra nutritious pizzaz.
