Radicchio Salad

Radicchio salad is a delicious way to include healthy bitter greens in your food life.  This salad is a good keeper and works well for make ahead meals.  For a little extra protein punch add a sprinkle of chopped walnuts.

RADICCHIO SALAD

INGREDIENTS:

1 head of radicchio rinsed and chopped

1 English cucumber peeled, seeded and sliced thin

1 cup cilantro chopped

½ cup raisins or 1 cup red seedless grapes cut in half

6 Tbsp finely chopped red onion (could substitute scallions)

Dressing:

½ cup good quality mayonnaise such as avocado mayo.  Read labels to assure you aren’t getting sugar and junky ingredients

1 Tbsp Dijon mustard

1 Tbsp honey

½ tsp fresh squeezed lemon juice

DIRECTIONS:

In glass jar add Dijon, honey, fresh lemon juice to mayo and whisk until smooth.  Set aside.

Put chopped radicchio, cucumber, cilantro, raisins and red onion in a large glass bowl and gently combine. 

Add dressing and fold until combined.

Serve Immediately or Chill
