Berry Cobbler (free of gluten)

Treat yourself and diners around your table to the sweet treat of berry cobbler.  As a self-proclaimed berry hoarder, there couldn’t be a tastier way to dwindle down the little bags of berries in the freezer for smoothies.  The featured photo has a blend of blackberries (my favorite) and blueberries. 

Surprise yourself and make this free of added sugar.  The berries offer plenty of sweetness.

Berries are known to be anti-oxidant rich with plant compounds to support immunity and clear thinking.  Mix it up or use your favorite.  This dish takes about ten minutes of prep time and 25 minutes in the oven.  Bake it in the cooler morning hours.

Berry Cobbler (free of gluten)

INGREDIENTS:

2 cups frozen berries.  Fresh berries work too (check your baking time five minutes sooner)

1/8 cup sugar divided if  you must.  Try it without added sugar.

2 Tbsp tapioca starch

1 Tbsp lemon juice

1 cup finely ground almond flour

4 Tbsp butter, slightly melted

1 egg whisked

pinch of sea salt

DIRECTIONS:

Preheat oven to 400 degrees.  Lightly butter a glass baking dish.  

In the glass baking dish, combine berries, 1/2 of sugar if you are adding, tapioca starch and lemon juice. 

In a mixing bowl combine almond flour, butter, other 1/2 of sugar if adding, egg & salt until well combined.

Spread over berry mixture.

Bake 25 - 30 minutes until top is golden brown and fruit is bubbly.  

Let cool 10 minutes & serve alone, with vanilla ice cream or frozen yogurt, or whipped coconut cream.
