Pumpkin Cranberry Dog Gone Good Cookies

1 cup organic brown rice flour. Organic is especially important with rice flour because rice is showing up with arsenic.
¼ cup barley flour
½ cup pumpkin puree
1/8 cup molasses
¼ cup chopped fruit juice sweetened dried cranberries or blueberries. If the berries are dry, soak them in water for 20 minutes, drain and pat dry before chopping.
1 tsp. cinnamon
Cold water as needed
Preheat oven to 325 degrees
Whisk dry ingredients until well combined
In a separate bowl whisk pumpkin, molasses and egg
Add wet mixture to dry and fold until well combined.
Stir in dried fruit.
Chill dough at least 30 minutes.
Using wax paper and extra flour you can roll these out and use cute dog friendly cookie cutters. My girl Daisy likes the dog bone, bunny and deer shaped cookie cutters.
If the dough is too dry, add cold water a teaspoon at a time. To save time you can also drop by teaspoons on parchment lined baking sheet instead of rolling out.
Bake on bottom rack of preheated oven. Begin checking for doneness at about 20 minutes, then again every five minutes until crunchy or nearly crunchy for your pooch. Allow to completely cool. Store in refrigerator or freezer.
