Carrot Cake with Cream Cheese Frosting (naturally gluten free)

Sometimes you just want cake! And cake you shall have! You don’t need a birthday to have cake!! Try this easy, oh so natural and free of gluten carrot cake with cream cheese frosting.

Almond flour, eggs, walnuts, walnut oil and cinnamon support sustainable energy without a blood sugar roller coaster. Even the cream cheese frosting is set up to love you more!!!

Healthful Carrot Cake free of gluten

I’ve done a little experimenting with Elana’s Pantry recipe and here is what I came up with:

Definitely use honey rather than agave. Honey is in its natural form, whereas agave is highly processed from the plant. Over processing is never as ideal as food in its natural state. Dr. Oz emphasizes agave has more fructose than even high fructose corn syrup. Since honey has in essence more impact to blood sugar as referenced by the glycemic index, use a little less. Use a scant 1/2 cup of honey, meaning for me, just one line below or a little less on the 1/2 cup measure. I am not too precise about this, but it works.

Raisins are definitely optional.

Chop the walnuts. (also optional)

Replace grapeseed oil with walnut oil. I prefer how walnut oil performs in baking conditions.

Add 1 teaspoon tapioca starch. It adds structure to help compensate for the lack of gluten.

You can definitely 1/2 the recipe by using three small eggs or two extra large eggs like the picture portrays.

Cream Cheese Frosting:

The recipe on page 162 of A Fresh Wellness Mindset is simple and naturally delicious.

If you prefer it, sprinkle the cake with shredded coconut rather than cream cheese frosting.

Keep this cake in the refrigerator because it is so fresh and natural without preservatives.
