Chocolaty Chocolate Chunk Cherry Cookies
Wellness done right does not mean deprivation. These cookies are a great example. Of course I don't recommend a Chocolaty Chocolate Cherry Chunk Cookie diet! But when you and your family want a snack, you want to give them wholesome real food. These cookies will satisfy to your heart's content and they don't have junkie ingredients. Yep, junkie ingredients all refined and processed, unpronounceable and not resembling real food create an addictive response in the brain causing you to keep eating. Your body never signals satiation because they are void of nutrition... The last one tastes as (addictively) good as the first.
But my Chocolaty Chocolate Cherry Chunk Cookies are 'paleo friendly' without refined sugar. The cherries and cacao are antioxidant rich; and because they aren't made with flour that has had all the goodness refined out of it... the protein rich almond flour and walnuts provide longer burning energy for strength and stamina and stable blood sugar (= happy mood).
Bonus: Walnuts are a good source of Omega 3s. But if your team doesn't like nuts in their goodies they are easily omitted and the recipe still works. You'll still get the benefit of the walnut oil.
Go ahead and put a plate of these out and watch them disappear. They freeze well so you can double the batch and hide some there! Here's the recipe:
2 ¾ cups blanched almond flour
½ tsp fine sea salt
½ tsp baking soda (aluminum free)
½ tsp guar or xantham gum
¼ cup 100% cacao powder
½ cup walnut oil
½ cup honey
1 Tbsp vanilla extract
¾ cup unsweetened cacao chips. Or use the same amount of coarsely chopped dark chocolate (73% cacao). I like the chips because I don’t have another step of chopping chocolate which is usually messy in my kitchen.
1 cup dried fruit juice sweetened cherries
½ cup chopped walnuts
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
In a large bowl, combine the almond flour, salt, baking soda. Add the cacao powder by putting it through a stainless steel mesh strainer, just pushing through with a spoon. This prevents lumps and subsequent over mixing. Gently whisk all ingredients until combined.
In another bowl, whisk together the walnut oil, honey and vanilla extract. I use a big measuring cup, topping off with each ingredient as I go. It saves another bowl to wash.
Fold in the chocolate, cherries and walnuts.
Spoon a couple of Tablespoons of the dough to form a cookie on the baking sheet. These cookies hold their shape well. A dozen fit nicely on a sheet.
Baking at altitude mine are ready in 10 minutes. To check I simply make sure they are ready to lift off the paper easily and are very light brown on the bottom. These tend to be somewhat chewy out of the oven - So Delicious! Be sure not to over bake. Remove to a cooling rack & enjoy. Due to their fresh ingredients store them in a tightly closed container in the refrigerator… if you have any leftover!
